It's unbleached, uncoated 40 lb paper made in the USA to FDA standards, with no wax or polymer coating. The paper protects the meat through the stall, but it breathes, so steam escapes and the bark stays firm instead of going soggy like it does in foil.
A 25 foot roll wraps several briskets.
