Pecan is a hardwood with spicy, nutty smoke, a milder cousin of hickory. It's great with beef, pork and poultry.

Chunks burn slow and steady, which makes them the choice for longer cooks on charcoal: kettles, kamados, drum smokers and offsets. Two or three chunks on lit coals is plenty for most cooks. Add another when the smoke fades.
