Butcher BBQ is David Bouska's company out of Chandler, Oklahoma. He started cutting meat in a meat market in 1982, then took that knowledge to the competition circuit, where he won the 2012 World Food Championship and the 2018 Jack Daniel's Invitational and landed in the Oklahoma BBQ Hall of Fame.
Bird Booster is the chicken injection Butcher BBQ used to win that first World Food Championship. It has a rich chicken base and a good amount of butter, and it's the one a lot of competition chicken is built on.
Injecting puts the flavor where the judges taste it, and it gives small pieces some protection against the moment they go from done to dry.
Mix 1/4 cup with 2 cups of water. That does about 10 lbs of meat. Inject white and dark meat all the way to the bone, moving the needle as you go. A 12 oz bag does more than 70 pieces of chicken, and it works on turkey too.
Sweeter: Honey Bird Booster. Rotisserie flavor: Rotisserie Bird Booster. The brine version: Bird Booster Brine.
