Mesquite is a hardwood with bold, Texas-style smoke, the strongest wood on our shelf, so a little goes a long way. It's great with beef, and good with fish, pork and poultry in small doses.

Chunks burn slow and steady, which makes them the choice for longer cooks on charcoal: kettles, kamados, drum smokers and offsets. Two or three chunks on lit coals is plenty for most cooks. Add another when the smoke fades.
