A West Tennessee style vinegar sauce — sweet and tangy rather than the straight pucker of an eastern Carolina sauce.

Thin bodied, so it soaks into pulled pork instead of sitting on top of it. That is the whole point of a vinegar sauce and it is why a shoulder sandwich tastes better with this than with anything thick.

Also worth keeping around as a mixer. Cut a heavy sweet sauce with it and you can move that sauce anywhere you want between rich and sharp.
