The butcher paper from Franklin Barbecue in Austin, the same custom non-waxed paper Aaron Franklin wraps his briskets in. Franklin says it's as important to their brisket as the smoker itself.

Wrap the brisket once the bark is set and put it back on. Paper lets steam escape, so the bark stays firm while the meat stays moist, which foil can't do. At Franklin's they serve on it too.
