Big jar, big pickles. These are whole pickles, with a few quarters packed in to fill the gaps, and there's a chile japonés in there doing quiet work.
Chile japonés is a small, slender dried red pepper — clean, sharp heat with a smoky edge. It doesn't make this a hot pickle. It gives the brine a faint bite and a little smoke that a plain dill doesn't have. Most people can't name what it is and just know this jar tastes better than the last one.
Whole pickles are the move for a cookout spread. Set the jar out with a fork and let people cut their own.
32 oz — the biggest jar we stock.
